- 1 skinless whole chicken
- 3-4 green chillies as per taste
- 1-2 tablespoon ginger garlic paste
- 1 teaspoon sugar
- 1 teaspoon thyme
- 1 teaspoon basin
- 1 teaspoon oregano
- 1 bunch coriander leaves
- 2-3 teaspoon turmeric
- 1/4 teaspoon mustard powder
- 1 teaspoon jeera
- 3-4 pepper corns
- 1 juice of lemon
- 5-6 tablespoons olive oil/melted butter
- salt to tast

- Clean the whole chicken thoroughly using turmeric powder.
- Turmeric powder acts as an anti bacterial agent and also increases the flavour.
- Make cuts all over the chicken preferably in diamond fashion..
- Rub the turmeric powder all over the chicken and keep i aside for 10 mintues.
- Using a mixer, grind all the ingredients to a paste and then coat the chicken with
- the masala paste making sure that the masala goes inside the cuts made.
- Again rub the masala coated chicken with enough olive oil
- so that the chicken is kept moist.
- wrap the chicken using a cling film (I used air tight tupperware box).
- Refrigerate the chicken for 24 hours so that the masala seeps inside the chicken.
- Place the chicken in a Microwave safe dish and cook for 30 minutes.
- Then remove the chicken and baste (spooning) with melted butter or olive oil
- and the juices oozed out of the chicken. Cook the chicken again for 10 minutes
- Repeat the procedure again.. and cook for 10 minutes
- check if the chicken is done by inserting a knife through the chicken.
- It should easily go through the chicken...
- Serve it with little wedges of lime and thinly sliced onions...
Tip
For a crust to form while roasting, you can use whole chicken with skin....
