              Roast Chicken with dried herbs......
Ingredients 

Serves: 5 

  • 1 skinless whole chicken
  • 3-4 green chillies as per taste
  • 1-2 tablespoon ginger garlic paste
  • 1 teaspoon sugar
  • 1 teaspoon thyme
  • 1 teaspoon basin
  • 1 teaspoon oregano
  • 1 bunch coriander leaves
  • 2-3 teaspoon turmeric
  • 1/4 teaspoon mustard powder
  • 1 teaspoon jeera
  • 3-4 pepper corns
  • 1 juice of lemon
  • 5-6 tablespoons olive oil/melted butter
  • salt to tast

  1. Clean the whole chicken thoroughly using turmeric powder.
  2. Turmeric powder acts as an anti bacterial agent and also increases the flavour.
  3. Make cuts all over the chicken preferably in diamond fashion..
  4. Rub the turmeric powder all over the chicken and keep i aside for 10 mintues.
  5. Using a mixer, grind all the ingredients to a paste and then coat the chicken with
  6.  the masala paste making sure that the masala goes inside the cuts made.
  7. Again rub the masala coated chicken with enough olive oil 
  8. so that the chicken is kept moist.
  9. wrap the chicken using a cling film (I used air tight tupperware box). 
  10. Refrigerate the chicken for 24 hours so that the masala seeps inside the chicken.
  11. Place the chicken in a Microwave safe dish and cook for 30 minutes.
  12. Then remove the chicken and baste (spooning) with melted butter or olive oil
  13.  and the juices oozed out of the chicken. Cook the chicken again for 10 minutes
  14. Repeat the procedure again.. and cook for 10 minutes
  15. check if the chicken is done by inserting a knife through the chicken.
  16.  It should easily go through the chicken...
  17. Serve it with little wedges of lime and thinly sliced onions...

Tip

For a crust to form while roasting, you can use whole chicken with skin....

Make it healthier

Can use skinless chicken as a prepared..It reduces the fat consumption
by around 20% since the skin of the chicken contains around 20% fat.

 garlic and make a paste along with the other ingredients...
