Though, when we look at the live demonstration of Dosa making, the process of pouring the batter and shaping looks quite easy, but actually, it is not. The toughest part of the entire process is the art of crafting the perfect Dosa. It is necessary to make sure that the tava or non-stick pan is evenly heated and before you pour the batter, sprinkle some water on it. This trick helps you to judge that whether the tava is heated properly or not. If the tava sizzles and the water is quickly absorbed, it is a sign that the tava is ready. Now, whisk the batter gently for 10 minutes, and if needed add water to adjust the consistency. This act charges all the particles and it becomes easy to spread the batter. Then, moisten the pan with a small quantity of refined oil. Now, use a medium-size ladle or a steel bowl to spread the batter in a circular motion on the tava. Add oil on the edges to make the Dosa crisper. Once it turns golden brown on the edges, it is a clear sign that you need to flip the Dosa. But, before that, you need to place the filling and then fold the Dosa from both the sides and then flip again. Cook it for 40-50 seconds and your crispy Dosa is ready that you can relish with sambhar and coconut chutney.
Temperature of the pan

The temperature of the pan plays a very important role in churning out the best dosa. The tava should neither be too hot nor too cold. If it gets too hot, reduce the flame and sprinkle some water.

How to spread the mixture
